Chocolate Pudding



This recipe only takes 6 simple ingredients and about 5 minutes to cook a rich tasting yet healthy chemical free chocolate pudding. 

Prep Time: 10 minutes
Cook Time: 5 minutes
Total Time: 15 minutes
Serves: 4 servings

Ingredients

  • Sugar - 1/2 cup
  • Cornstarch - 3 tablespoons
  • Unsweetened cocoa powder - 2 tablespoons
  • Low fat (1%) milk- 2 cups
  • 1 egg yolk
  • Vanilla extract - 2 tablespoons

Instructions

1. In a saucepan, combine all the dry ingredients (the sugar, cornstarch and cocoa powder).








2. In another container, combine the wet ingredients (the milk and egg yolk).








3. Slowly whisk the wet mixture into the dry mixture and combine until smooth (i.e. without lumps).





4. Cook over medium heat while stirring constantly until the mixture comes to a gentle boil. Note: Add dark chocolate at this point, if desired.
5. Once the mixture starts to boil, it thickens in less than a minute so keep stirring until the mixture becomes thick.






6. Remove the mixture from heat and add the vanilla extract.  Mix well.




7. Pour the mixture into the serving cups.
8. Serve warm or cold (refrigerate).

Sweet Vermicelli (Saviyaan)


This low calorie instant dessert is the perfect recipe to go with tea or hot milk. Taste is heightened when served with some milk cream.

Serving: 2
Cooking Time: 10 minutes approx.

Ingredients

  • Vermicelli - 1 cup
  • White Sugar - 1/4 cup
  • Water - 1.5 - 2 cup
  • Oil - 3 tablespoon
  • Almonds (optional) - 1 tablespoon (chopped)
  • Green cardamom (optional) - 2 - 3 

Method

1. Heat oil in a pan for almost a minute.
2. Add vermicelli and cook at high heat for about 2 to 4 minutes.



3. Add sugar and dry fruits and cook for a minute.



4. Add water and cook at high flame for 2 - 5 minutes.


5. Once the water becomes somewhat absorbed lower the heat to medium and cook till completely done.


6. Serve hot.

Mug Brownie (Eggless)

This instant and easy recipe makes a moist brownie in less than 5 minutes and fulfills all sweet chocolate cravings. The recipe uses microwave for baking which makes this an instant dessert recipe.

Ingredients

  • Canola oil  - 1 1/2 tablespoon [Calories = 186]
  • Water - 2 tablespoon
  • Vanilla extract - 1 drop (optional)
  • Salt - 1 dash
  • Instant coffee powder - 1 pinch (optional)
  • Granulated sugar - 1 1/2 leveled tablespoon [Calories = 72]
  • Unsweetened cocoa powder - 2 leveled tablespoon [Calories = 24]
  • All purpose flour - 2 leveled tablespoon [Calories = 56]
  • Crushed walnuts (optional)

Procedure

  1. In a mug, mix oil, water salt and coffee (if using) and whisk well till a smooth mixture is formed.
  2. Add the cocoa powder and whisk well again. 
  3. Add the sugar and whisk well. 
  4. Add the flour and whisk well.

  5. Sprinkle walnuts on the top.

Banoffee Pie


Banoffee pie is an easy to make and delicious tasting dessert. Although the dish is slightly high in calories but making it part of the weekly cheat meal will be a wise move!

Ingredients

  • For the Base
    • Butter - 100 gm (melted) [Calories = 720]
    • Digestive biscuits - 200 gm (crushed) [Calories = 1000]
  • For Caramel
    • Butter - 100 gm [Calories = 720]
    • Dark brown sugar - 100 gm [Calories = 375]
    • Condensed milk - 379 gm [Calories = 1244]
  • For the Top
    • Bananas - 4 (small) [Calories = 360]
    • Whipped cream - 300 ml [Calories = 180]
    • Chocolate - 1 tsp (grated for garnishing) [Calories = 58]

Method

  1. Prepare the base: 
    1. Take a bowl. Add the crushed biscuits and butter and mix well. 
    2. Using a spoon, spread the crumbs onto the base of the cake pan. 
    3. Chill it for 10-15 minutes or until firm. 
  2. Prepare the Caramel: 
    1. In a non-stick pan, melt the butter and sugar over low heat. Keep stirring during this time till the sugar completely dissolves. 
    2. Add condensed milk to the mixture while mixing constantly. Bring the mixture to a rapid boil. Let it boil for a minute till a thick golden coloured caramel forms. Note: The caramel must be squidgy.
  3. Set the Pie:
    1. Spread the caramel over the biscuit base in the pan. 
    2. Chill it again for either an hour, or until it becomes firm or if it is to be served.
  4. Make the top:
    1. Lift the pie from the pan and place it into the serving dish. 
    2. Slice the bananas. 
    3. Spread a layer onto the caramel layer.
    4. Spread the layer of whipped cream onto the bananas. 
    5. Sprinkle the chocolate grating on the top.
      5. Serve cold.
